We decided to get a little experimental with this batch of stout. Conjuring memories of some of our favourite smoked beers, we had a desire to create our own.
To add an extra splash of umami to this beer, we chose to use Shiitake mushrooms as our smoked vessel. Smoked on-site and then added to a tank for the beer to circulate through, imparting a delightful touch of smoke.
The result is a subtle peatiness that adds a whole new depth of flavour to this stout. Caramelised molasses and soy sauce work together beautifully for a unique drinking experience.
