The influence for this beer comes from the traditional rustic village lagers of Bavaria and in particular from an evening drinking Mahr’s outstanding A.U. in Bamberg back in November 2019 (which incidentally feels like a lifetime ago !). We have brewed the beer traditionally ‘Ungespundet’ or un-bunged so that most of the CO2 produced in fermentation is allowed to escape from the vessel resulting in much lower levels of carbonation. Wehave also for the first time used our new less modified malt, created for us by Warminster Maltings, and we think this has really added to the malt complexity in the beer. In true rustic style the beer has a decent haze and a good dose of EKG has given it both great balance and some additional background hop interest. We are very happy with it.
