The Dunkel is perhaps the oldest of all beer styles, having been brewed in Bavaria to Reinheitsgebot since 1516. The water profile of Westcombe Farm's spring lends itself to darker beers, so no wonder it was our most popular special release last year.
We have used a portion YQ population wheat grown by Fred Price at Gothelney Farm, without any inputs, to supplement organic Munich malt in the grist. As it’s difficult to get this wheat malted, we are using it in its raw form and feel it adds a little nuttiness to what should already have bready undertones.
